How to prepare fresh cheese with 1 liter of milk, 1 yogurt and half a lemon

Although supermarkets are overflowing with cheeses of all kinds, each better than the other, it is always useful to know that it is possible to prepare excellent fresh cheese at home, completely natural and very tasty.

To prepare fresh cheese, you need very few ingredients: milk, yogurt, and lemon. The result will be an excellent cheese that you can use for salads, spread on bread, or use in other preparations.

Ingredients: 1 liter of fresh whole milk, 1 natural yogurt, juice of half a lemon, 1 piece of cotton gauze, a bowl, and a mold of approximately 12 cm in diameter.

1. Heat the milk to 90 degrees for about 15 minutes. Add the yogurt and lemon juice and mix well.

2. Set the oven to 90 degrees and pour the entire mixture into the mold. Bake in the oven for 2 minutes, until the whey separates and turns yellow.

3. Place the gauze over the mold, and by holding a bowl underneath, pour the contents of the mold directly onto the gauze. The whey will fall into the bowl, while the curd will remain on the gauze.

4. Squeeze the gauze well to remove the whey. Pour the curd back into the mold, and place a weight on top (a jar or a filled bottle). Refrigerate for 30 minutes.

5. Remove the mold from the refrigerator and take off the gauze. You can add a little salt to the preparation. Transfer the cheese to another container and let it rest in the refrigerator for another 8 hours.
