The flotation test
A tried-and-tested method, the flotation test gives an idea of egg freshness based on the size of the air pockets. Older eggs develop larger air pockets, causing them to float. To perform this test, simply immerse the eggs in water.
Use your senses
In addition to the float test, you can also use your sense of smell, sight and touch to check the condition of your eggs. The sense of smell, for example, can be a powerful tool for assessing egg freshness. Fresh eggs generally have a neutral or grassy smell. On the other hand, if an egg has a foul or sulphurous odour, this is a clear sign of deterioration.
